LaPiS: Silogs

Of all the “silogs”, this is, by far, my favorite…

Homemade TAPa (cured beef)…

steaming SInangag (fried rice)…

…and freshly cooked itLOG (sunny side-up) with a side of sliced tomatoes seasoned with vinegar, salt and pepper

Put the capitalized letters all together and what have you got? TAP-SI-LOG! Yey! :cool:

Breakfast, lunch or dinner – a plate of this “yumminess” always hits the spot and brings back fond memories of home. :D

Twice-Cooked Chicken Adobo with Quail Eggs

Probably all of us Pinoys have an “adobo of our youth” – that is, the preferred adobo “style” which was served in our homes while growing up and which we continually long for as adults. 

For me, it was the adobo which my mom (and lola) served – the one where we “double-cooked” the meat so that it comes out crunchy and crisp.  We are also accustomed to eating this adobo with the sauce separate from the meat – that is, we only put in the sauce as we ate the dish – of course, with a heap of steamed white rice! :D

Sad to say, though, that I have only been successful in “recreating” this adobo version thrice at the most.

Having said this, you can understand my ”pride” in having replicated my “youth adobo” yesterday with a few twists – instead of frying the meat, I decided to use the turbo broiler to make the skin crunchy.  I also added some quail eggs to my version for that decidedly Chinese flair.

Without further ado, may I present… my version of Twice-Cooked Chicken Adobo with Quail Eggs! (Psst… I listed the recipe below for anyone who might be interested to give this a try ;) ).

I know… the eggs are screaming C-H-O-L-E-S-T-E-R-O-L!!! :lol:

So better eat in moderation…

…but don’t forget the rice! ;)

What you need: 1 kilo chicken parts (I used thighs and whole legs), sea salt (to rub on chicken parts for flavor),  3 tbsp canola oil, 12 cloves crushed garlic, 1/4 head minced white onion, 3 tbsp Datu Puti vinegar, 2 tbsp patis (fish sauce), 1/2 tsp freshly cracked black peppercorns, 2 pcs bay leaf, 1/4 cup Kikkoman soy sauce, 1/2 cup water, dashes of Tabasco sauce to taste, 20 pcs hard-boiled quail eggs

How to: Saute minced white onion in oil until transluscent and set aside.  Saute garlic in oil until slightly brown. Add chicken parts and brown while stir-frying.  Add vinegar.  Don’t stir until vinegar boils and releases its acidic odor.  Add pepper, patis, soy sauce, bay leaf, water, sauteed onions and tabasco sauce.  Cover and simmer until meat is tender.  Add quail eggs.

Once cooked, separate meat from sauce with quail eggs.  Place chicken in turbo broiler at 175 degrees C for 15 minutes or until skin turns crispy.  Serve chicken and sauce separately.  Best eaten with steamed white jasmine rice.

LaPiS: Stuffed

Being on the tail-end of vacation mode, I was honestly tempted to just re-hash my previous blog on stuffed bell peppers for this week’s theme.

Reason (?) won out though as I managed to come up with new “stuff” (pun intended ;) ) to post.

Good thing hubby found these creme-filled chocolate eclairs on the frozen section of the grocery shortly before we left!

Truly, “stuffed” store-bought desserts like these are always lifesavers – not only for impromptu dinner parties but also for times like these when I almost didn’t have a LaPiS post for the week! :lol:

Now, how’s that for being doubly sweet? ;)

Tummy Crunch(i)es

Guess a lot of you have heard how crunches supposedly does wonders for the tummy.

I couldn’t agree with this more.  Except that in our family, this is the type of crunch(i)es that make our tummies happy. ;)

The perfectly crunchy skin of “just-popped-out-of-the-broiler” Lechon Kawali! :cool:

We are accustomed to eating our lechon kawali (roast pork belly) in bite-sized pieces like these.  Dip these babies either in soy sauce and vinegar with a little bit of crushed garlic or with Mang Tomas all-around sarsa and you will surely be in sheer “oinkish delight”! :lol:

And the requisite side dish? Ginisang Munggo (Sauteed Mung Bean Soup), of course! Perfect combination! For mung bean recipe, click here.

I am pleased to note that even our “littlest member” has requested for seconds! It certainly makes my “kitchen mom heart” very full to hear the kids say “I want crunchie please!” everytime I serve them this dish. 

Note to self: replenish ”forbidden goods” during our next “neighborly” visit – hahaha! :lol:

LaPiS: Two-Tone

Carrot and Crab Combo

What do you do if you don’t want a bunch of carrots in the fridge to go to waste?

Why, make some carrot soup, of course! ;)

And this is just exactly what I did a couple of nights ago…

Made some cheesy carrot soup…

…and paired it off with homemade crabstick croissant  :cool:

Just perfect for a light yet satisfying dinner! Delish!

LaPiS: Spicy

Sugar and spice

And everything nice

That’s what this yummy dish is made of! :)

This is my version of Sweet Spicy Prawns.  I simply squeezed half a lemon on a kilo of prawns and seasoned these with about a tablespoon of sea salt before sauteeing with the pre-simmered carrot strips and 3/4 of a cup of sweet chili sauce.  Easy-peesy, right? ;)
