Sampled this delish dish recently at my brother Monty’s house. Per my sis-in-law Millie, this is currently one of their favorites – and I can clearly see why!

They apparently just stumbled upon the recipe for this in a free recipe book from a local ketchup and sweet chili sauce maker which Millie found lying around in their house. Ain’t serendipity grand most of the time?
I’m (virtually) paying their yummy treat forward by sharing with you its recipe below.
WHAT YOU NEED: 400 gms cream dory fillet or any white fish fillet, 1/4 cup calamansi or lemon juice, 2 egg whites, 1/2 cup ordinary breadcrumbs, 1/2 cup butter, salt and pepper to taste
HOW TO: Marinate fish in the calamansi or lemon juice. Season with salt and pepper and set aside. Dip fish in egg white then immediately cover in bread crumbs. Pan fry in butter until golden brown.
FOR THE SAUCE: 1/4 cup sweet chili sauce, 1/2 cup mayonnaise, 3 tbsps evaporated milk, 2 tbsps chopped ginger, salt and freshly ground pepper to taste
Mix sweet chili sauce, mayonnaise and milk. Add chopped ginger and season with salt and pepper. Pour mixture over fish. Bake for 15 minutes in a 350F oven (this may also be baked in the turbo broiler for 25 minutes – with the dish being covered by foil during the first 15 minutes and the foil removed for the remainder of the cooking time). Serve hot with your favorite vegetable siding (in this case, they were apparently fans of ampalaya with egg – hahaha!).
