Chicken Potato Salad

Probably one of the staples in our home while I was growing up was chicken potato salad as it went well with almost anything  – grilled burgers, baked pork chops, fried chicken… name it, it was a “match”! 🙂

Saying this, it comes as no surprise that I too now prepare the same dish for my own family.

Here’s my version of this family fave which I served recently with baked pork chops with apples.  Since the pork chops didn’t quite make it to the “delish” list, it was the potato salad that became the “star” of the meal! 😀

What was intended as a “side”…

…quickly became the “main”! (Sorry, chops, maybe next time…)

Here’s the quick recipe.

What you need: 3 medium potatoes (boiled and cubed), 1 carrot (boiled and cubed), 2 celery stalks (diced), 2 pcs boneless, skinless, cooked chicken breasts (shredded), 3 eggs (hard-boiled), mayonnaise, olive oil, salt and pepper to taste, dried or fresh parsley for garnish

How to: Just toss them all up and you’re good to go! Best served chilled.

    Enjoyed it…not too much the porkies, though. Di bale, maybe next time eh medyo mas maganda na ang combination ng dalawa.

    Yup. Will make sure I request for “thinner” slices of chops next time we get our “loot” from the neighboring kingdom so the flavor will hopefully seep through more easily… Glad you enjoyed the salad though. 🙂

  3. hindi yummy yung chops? pero sa pic ang ganda pa naman, hehe!

    we also had chicken something salad while growing up, pero chicken macaroni naman kami instead of potatoes. comfort food no? 🙂

    You bet! Two days ago nga, ito na naman ang hinain ko sa mini-salu-salo dito sa house 🙂

    Yung chops? Kulang sa lasa… guess because the cuts were too thick for the flavor to go through – sayang nga e. 😦
