Meatloaf


This is one of the very first recipes that I “sourced” while here in the kingdom.  Got this from the aunt of one of our friends in Pinas who, incidentally, has also been based here with her husband for quite some time now.  They were one of the very first families who graciously welcomed us into their home inside Aramco and who made it possible for us to fulfill our weekly religious obligations. 🙂

I love the cheesy flavor of this dish as well as the simplicity in preparing it.  And yes, like all other meatloaves, it seems to taste better once re-heated after “some days”  in the fridge – hehehe! 😳

Here’s the easy recipe:

INGREDIENTS:

  1. 1/2 kilo ground beef (I use ground chicken for my version though)
  2. 2 eggs
  3. 3 slices bread, torn into small pieces
  4. 1 cup cheddar cheese, shredded
  5. 1 large carrot, grated
  6. 1 medium onion, chopped
  7. 2 tsp salt
  8. 1/2 tsp pepper
  9. 3/4 cup milk
  10. 1/4 cup raisins (optional – I just added this)

FOR THE TOPPING:

  1. 1 cup brown sugar
  2. 1/2 cup ketchup
  3. 2 tsp mustard

HOW TO:

  1. In a bowl, mix salt, pepper and eggs.
  2. Add the rest of the ingredients.
  3. In a separate bowl, mix topping ingredients.
  4. Place meat mixture in baking pan and pour topping mixture on top.
  5. Bake at 350F (177C) for one hour.
  6. Serve hot with steamed white rice.

  1. i love meatloaf.. and yes, they always taste better the next day. your ingredients list look like that of embutido minus the cheese.. :o)
